Rose Petal Jelly
I love working with roses. They grow wild all along the river that runs by my house. I pick them in the early morning, just after the dew dries and steep them to capture the scent and color. The fragrance clings to me all day and rises from the folds in my clothes and when I take down my hair in the evening. Cooking them is alchemy as well. The color brightens to a fetching lipstick pink when I add the lemon juice and then fades gently throughout the year. It will grow paler, but still taste like a summer morning when you open it. Don't save this one, use it right away and buy more next year.
