Spruce Tip Syrup

Fresh light green spruce tips are picked, best just after rain and after they have shed their papery coverings, these are simmered and simmered on the back of the Dipper Kitchen stove, the longer the better.  The color shifts from green to milky white to amber and the scent in the kitchen softens from fresh tingly pine to something warm and fruity.  It is a mysterious process, I have no idea how or why this transformation takes place.  We cook this syrup a little thicker because it is absolutely top notch poured over pancakes or dribbled like honey over yogurt or ice cream or morning toast.
